Breakfast Chicken Sausages

This is a super simple recipe and because it can be prepared the day before, it's a winner in so many ways! Give yourself confidence that your kids are well fed and won't bug you as much for snacks... which you can now decline with conviction. Our kids love these sausages, full of good protein so they don't get those snack cravings as readily. Win win!

Ingredients

  • (2 pounds) Ground Chicken
  • (2 generous teaspoons) Salt (pink preferred)
  • (2 Tablespoons) Honey
  • (1 Teaspoon) Ground Sage
  • Butter for cooking

Directions

  1. Mix all ingredients (except butter) thoroughly in one bowl. Work it over with your hands for the best results.
    Ground chicken is very sticky, so work it while it is still cold for easier management.

    At this point, you can tightly cover the chicken and store it in the fridge for up to 2 days before cooking. 
  2. Cooking:

    Slice and put a generous square of butter in a skillet on "barely" medium heat. Refrain from turning up the heat to "cook them faster". This will burn both butter and chicken, and it also won't cook any faster. Its hard, but everyone will just have to be patient!
  3. Scoop your chicken mixture and "form" it into the sausage patties (size to preference) and place onto the hot, medium heat skillet. When the mixture is too sloppy, I use a spoon to plop it onto the skillet.

    (I don't make time to do pretty food hahaha)
  4. Cook until no longer pink in the center. About 4 mins each side with a patties that is approximately 3 tablespoons
  5. Serve with simple fried eggs - easy protein to sustain you through your busy day. Add some seasonal fruit and maybe some sourdough toast for an extra special brunch!
